I haven't started looking for a dehydrator yet but one is on my list of to items .

Is this unit rated "very good", or passable? And the price, is it a deal?

Yes, they are the best!!!! I gave one to my husband as an early Christmas present....Works wonderful but it makes you hungry when you are using it. Aroma throughout the house!!!!

How much is this unit normally? How long do most of the dehydrated foods store, say, in a ziploc bag?

Edit: I see the savings. Does the guide that comes with it say how long you need to dehydrate each kind of food?

209$ on Amazon, 259$ (I think) from them direct.

The last question I personally can't answer. But I have a vacuum sealer and lots of oxygen absorbers so I can store them in 1/2 gallon jars. Off the top of my head vacuum sealed prolly a couple of years.

Anyone else know?

It depends on what you are making....beef jerky will last 1 month on the counter in a sealed glass jar...couple months in the frige. Vacuum sealed and frozen over a year. Fruits need to be placed in the oven after using the dehydrator for about 10 minutes at 125-150 to get rid of residual moisture. can the vacuum seal and place in frige or freeze them for added shelf life of at least a year. Always read the directs that come with the excalibur for processing procedures/times. I got the oven part from a book called Back to the basics...Hope this helps

But don't you lose all the healthy enzymes of the fruit if you go over 110 degrees?

No not too many according to the book but never go over 150 and make sure your oven temp is correct...If you leave too much moisture it increases the chance of molds... also follow the blanching guidelines in the excalibur manual for fruits and veggies before dehydrating...
